Die Position

Als Executive Chef (m/w/d) übernehmen Sie die Leitung der Küchenbereiche unseres Restaurants & Bar "Florio", des In-Room-Dining und unseres Bankettbereichs. Sie sind Ansprechpartner für unsere Gäste und Mitarbeiter in allen Belangen und verantwortlich für deren Zufriedenheit. Zudem gehören folgende Aufgaben zu Ihrem Verantwortungsbereich:

  • Gewährleistung eines reibungslosen Serviceablaufs in allen Küchen unter Einhaltung aller Hygienevorschriften nach HACCP und unserer Unternehmensstandards sowie die permanente Überprüfung der Arbeitsabläufe
  • Unterstützung bei der Herstellung und Zubereitung unseres Speisenangebots
  • Regelmäßige Neugestaltung unserer Speisekarten und Menüvorschläge sowie kreative Präsentation der Speisen und Gerichte in enger Kooperation mit Rocco Forte Hotels' Creative Director Of Food, Herrn Fulvio Pierangelini
  • Erfolgreiche Kommunikation und Zusammenarbeit mit anderen Abteilungen
  • Sorgsame und professionelle Bearbeitung von Gastbeschwerden
  • Sicherstellung einer qualitativ hochwertigen Ausbildung in der Küche
  • Kontrolle eines optimalen Waren- und Materialeinsatzes sowie die Planung und Überwachung der monatlichen Inventuren
  • Erstellung von Forecast und Budget sowie Optimierung des Angebots, der Qualität und den anfallenden Kosten zur Zielerreichung im F&B
  • Motivation, Training und Förderung der Mitarbeiter und Auszubildenden sowie Durchführung von Mitarbeiterbeurteilungen
  • Durchführung von Vorstellungsgesprächen und Auswahl neuer Mitarbeiter in Kooperation mit den Abteilungsleitern
  • Personalplanung auf Basis des vorgegebenen Budgets sowie Durchführung von Personaleinsatz- und Produktivitätskontrollen zur Einhaltung der geplanten Personalkosten in den gastronomischen Bereichen

Was wir von Ihnen erwarten

  • Ausgeprägte Berufs- und Führungserfahrung im Culinary-Bereich in der Luxus-Hotellerie
  • Erfolgreich abgeschlossene Ausbildung als Koch/Köchin (m/w/d)
  • Fundiertes kulinarisches Fachwissen durch mehrjährige Berufserfahrung in den verschiedenen Küchenbereichen und auf verschiedenen Posten, idealerweise in der gehobenen Hotellerie / Gastronomie
  • Erfahrung in Mitarbeiterführung und -motivation
  • Erfahrungen in der italienischen Küche wünschenswert, aber keine Voraussetzung
  • Offene, kommunikative und selbstbewusste Persönlichkeit
  • Ausgeprägtes Verantwortungsbewusstsein, Durchsetzungsvermögen und Zuverlässigkeit
  • Liebe zum Detail, Kreativität, umfangreiche Speisenkenntnisse und starke Gastorientierung
  • Leidenschaft zu Produkten und handwerkliches Geschick bei der ganzheitlichen Verarbeitung
  • Gespür für aktuelle Trends und Entwicklungen in der Gastronomie und Hotellerie
  • Fließende Deutsch- und Englischkenntnisse in Wort und Schrift
  • Guter Umgang mit den gängigen MS-Office Programmen
