Job Summary

As a key member of our culinary team, the Executive Pastry Chef is responsible for the overall success of our daily pastry operations. This role requires a creative and skilled individual who can lead the team in preparing high-quality pastries for all areas of the hotel. The successful candidate will be responsible for guiding and developing staff, ensuring sanitation and food standards are met, and overseeing all pastry food preparation areas.

Candidate Profile

We are seeking a highly motivated and experienced individual with a passion for pastry arts. The ideal candidate will have a high school diploma or equivalent, and a minimum of 4 years of experience in culinary, food and beverage, or a related professional area. Alternatively, a 2-year degree in Culinary Arts, Hotel and Restaurant Management, or a related major, and 2 years of experience in a similar role would be considered.

Core Work Activities

Leading the Discipline Teams

The Executive Pastry Chef will be responsible for supervising and managing employees, ensuring that they are equipped to perform their duties in the absence of the incumbent. This will involve coordinating activities, utilizing interpersonal and communication skills to lead, influence, and encourage others, and advocating sound financial and business decision-making.

Ensuring Culinary Standards and Responsibilities are Met

The successful candidate will be responsible for developing, designing, or creating new ideas and items for the pastry kitchen, following proper handling and storage procedures, and maintaining high standards of quality and presentation. They will also be responsible for ensuring that employees maintain required food handling and sanitation certifications, and that the property complies with all applicable laws and regulations.

Ensuring Exceptional Customer Service

The Executive Pastry Chef will be responsible for monitoring and providing service behaviors that are above and beyond for customer satisfaction, managing day-to-day operations, and ensuring that the quality and standards of the pastry department meet the expectations of our guests. They will also be responsible for empowering employees to provide excellent customer service, responding to and handling guest problems and complaints, and interacting with guests to obtain feedback on product quality and service levels.

Maintaining Culinary Goals

The successful candidate will be responsible for setting and supporting achievement of culinary goals associated with pastry products, including performance goals, budget goals, and team goals. They will also be responsible for providing specific guidance to prioritize, organize, and accomplish daily pastry operations work, supporting procedures for food and beverage portion and waste controls, and purchasing appropriate supplies and managing inventories according to budget.

Managing and Conducting Human Resource Activities

The Executive Pastry Chef will be responsible for identifying the developmental needs of others, coaching, mentoring, or otherwise helping others to improve their knowledge or skills, and ensuring that property policies are administered fairly and consistently. They will also be responsible for ensuring that disciplinary procedures and documentation are completed according to Standard and Local Operating Procedures (SOPs and LSOPs), and supporting the Peer Review Process.

Additional Responsibilities

The successful candidate will be responsible for providing information to supervisors, co-workers, and subordinates by telephone, in written form, e-mail, or in person, analyzing information and evaluating results to choose the best solution and solve problems, and attending and participating in all pertinent meetings.
