About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at Clärchens Ballhaus, a renowned Berlin institution. As a key member of our culinary team, you will be responsible for contributing to the high standards of our Clärchens | Luna Restaurant by producing a high-quality, seasonal, sustainable, and uniquely German-inspired menu with flair.

Key Responsibilities

  • Lead internal teams to manage the external appearance and behind-the-scenes operations of a top-class cultural institution with precision.
  • Train, develop, and mentor internal teams to ensure the adherence to recipes, portion sizes, and standard preparation procedures for all dishes, and guarantee that all kitchen team members follow these standards.
  • Support the Chef de Cuisine in menu development; consider the availability of ingredients and materials, as well as the skills required for preparing new menus, while consistently maintaining the high culinary standards of Clärchens.
  • Ensure the smooth and efficient operation of the kitchen, taking into account both guests and staff.
  • Completely familiarize yourself with and adhere to all health and safety regulations, company employment guidelines and procedures, and standards related to the kitchen and kitchen team.
  • Implement and monitor all HACCP requirements and the safety program in all kitchens.
  • Under the guidance of the Chef de Cuisine, coordinate training sessions for the kitchen and other production and back-of-house staff, as well as continuously monitor and supervise their performance.
  • Be present with the team in the kitchen during peak service hours and work most of the time in the kitchen/preparation area.
  • Advise the Chef de Cuisine and Clärchens General Manager weekly on culinary team planning.
  • Lead and develop talents in our kitchen teams.
  • Provide guidance, development, and implementation of decisions for operational excellence that lead to scalable SOPs for the development of real estate, new concepts, and/or F&B changes within the hotel.
  • You are willing to design guidelines, procedures, and systems to improve our business, service, customer loyalty, and the magic of the Fotografiska experience.
  • Fluent German and English skills are a plus.
